Ever wondered why the rice they serve in every Chinese restaurant under the sun (even that sordid little fleabag joint between the newsagent and the bookies) is far superior to the alternately porridge-like mess or chewy undercooked shambles you routinely cobble together at home? Despite your best efforts, rice cooked according to the pack instructions found all over the western world is doomed to failure. It's finally time someone said it... the game is rigged! Asia has a secret weapon, and it’s called the rice cooker.

Photo by Lali Masriera“Not another machine for the kitchen!”, I hear you sigh. Well, yes, but not necessarily a very big one. Nowadays many of Europe’s bigger manufacturers are helping to usher in the age of the rice cooker on this side of the globe too, and they come in fairly compact sizes - perfect for a two-person household, for example. So far, though, I’ve yet to find one that doesn’t use one without a non-stick surface (regular readers will know of my predilection for cast iron). If you have more luck, let me know!
